James Joyce lived at the Pavillon Faubourg Saint-Germain. And it is in homage to his book "Dubliners" that the hotel's restaurant is named "Les Parisiens". A well-chosen name to serve the cooking philosophy of Chef Thibault Sombardier, a figure of Parisian haute-bistronomy, and Executive Chef Matthieu Pirola.
